Creamy Basil Dressing

This is the BEST basil dressing recipe that I’ve tried.  Not super good for you with all that Mayo, but it’s okay to splurge sometimes right?  I tend to use whatever basil I have in abundance, but my personal fave’s are Sweet, Napoletano, and Thai.  Try it with your favorite variety and tell me what you think.

Ingredients

  • 1 cup mayonnaise ( I listened to my Mama & always use Best Foods )
  • 1 cup chopped green onion
  • 1 cup chopped fresh Basil leaves
  • ¼ cup freshly squeezed lemon juice ( about 2 lemons worth)
  • 2 tsp. chopped garlic
  • 2 tsp. anchovy paste ( don’t skip this stuff. I know it sounds gross, but it adds lots of flavor)
  • 2 tsp. kosher salt
  • 1 tsp. freshly ground black pepper
  • 1 cup sour cream

Instructions

  1. Put everything in the blender except the sour cream and blend until smooth. Add the sour cream and process just until it’s blended. Refrigerate until ready to use.
