I LOVE raw kale, but the rest of my family isn’t quite as fond of it. Disguising it in a great tasting smoothie is a good way to add it to their diets.
Kale is a nutritional powerhouse and is beneficial to your body in more ways than you can imagine! Just one cup of kale has zero fat and only 36 calories and is high in vitamins A & C, as well as containing plenty of antioxidants! Kale contains more iron than beef & if that’s not enough to make you fall in love with it, it also has a good amount of vitamin K which is said to fight off mental aging. This was the best attribute for convincing Paul to try it! Kale is so easy to grow & doesn’t mind the winter cold. It’s one of the first things I’ll be seeding next week so you can look for starts in early March. Planting in the early spring & again in late summer will keep your garden producing kale most of the year.
Parley is also a mighty immune system booster! It contains lots of chlorophyll, which helps curb the growth of bad bacteria as it has anti bacterial properties. With all the cold & flu bugs going around this winter this yummy smoothie is a great way to boost your immune system. Here is a basic recipe, but you can add just about any other fruit or juice you have on hand & make it your own! Be well ~

Winter Kale & Parsley Smoothie
- 1/2 cup (packed) parley leaves & stems ( I prefer Flat Italian)
- 4 kale leaves (center ribs removed)
- 1 cup non-fat greek yogurt
- 1 banana (cut into pieces)
- 1 teaspoon ground flaxseed
Puree all ingredients in blender with one cup of water. If it’s too thick just add a little more water. Yummy & oh so good for you!
